Ingredients:

– 1 pound of fresh mushrooms, sliced

– 3 cloves of garlic, minced

– 1/4 cup of unsalted butter

– 1/4 cup of all-purpose flour

– 4 cups of chicken or vegetable broth

– 1 cup of heavy cream

– 2 tablespoons of chopped fresh parsley

– Salt and pepper to taste

Instructions:

1. In a large pot, melt the butter over medium heat. Add the sliced mushrooms and minced garlic and cook for 5-7 minutes, or until the mushrooms are tender and browned.

2. Sprinkle the flour over the mushroom mixture and stir until it is fully combined.

3. Gradually pour in the chicken or vegetable broth, stirring constantly to avoid lumps. Bring the mixture to a boil, and then reduce the heat to low and let it simmer for 10-15 minutes.

4. Stir in the heavy cream and parsley, and season with salt and pepper to taste.

5. Use an immersion blender or transfer the soup to a blender and puree until smooth.

6. Serve hot with crusty bread or crackers. Enjoy your homemade mushroom soup!
