As the weather starts to cool down and the leaves begin to change colors, there’s nothing quite like a warm bowl of tomato soup to warm you up from the inside out. The combination of the hearty soup and the rustic charm of the mug creates a truly delightful dining experience.
Ingredients
3 pounds of ripe tomatoes, chopped
1 onion, diced
3 cloves of garlic, minced
2 tablespoons of olive oil
1 teaspoon of dried oregano
1 teaspoon of dried basil
1 teaspoon of salt
1/2 teaspoon of pepper
2 cups of chicken or vegetable broth
1/2 cup of heavy cream
Instructions
1. Heat the olive oil in a large pot over medium heat.
2. Add the onion, garlic, and sauté until the onion is translucent. Add the chopped tomatoes, oregano, basil, salt, and pepper. Stir to combine.
3. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and let the soup simmer for 20-25 minutes, stirring occasionally.
4. Remove pot from heat and let it cool slightly.
5. Using an immersion blender, puree the soup until it is smooth.
6. Return the pot to the stove and add the heavy cream. Stir to combine.
7. Heat the soup over low heat until it is warmed through.
8. Serve hot with croutons or a grilled cheese sandwich for dipping.
