Ingredients:

– 2 tablespoons olive oil

– 1 large onion, chopped

– 2 medium carrots, chopped

– 2 celery stalks, chopped

– 3 cloves garlic, minced

– 1 can (28 ounces) diced tomatoes

– 6 cups vegetable broth – 1 teaspoon dried basil – 1 teaspoon dried oregano

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 can (15 ounces) kidney beans, drained and rinsed

– 1 cup elbow macaroni

– 1/4 cup chopped fresh parsley

Instructions:

1. In a large pot, heat the olive oil over medium-high heat. Add the onion, carrot, and celery, and cook until the vegetables are tender, about 5 minutes.

2. Add the garlic and cook for an additional 30 seconds.

3. Add the diced tomatoes, vegetable broth, basil, oregano, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.

4. Add the kidney beans and macaroni to the soup and let it simmer for an additional 10 minutes, or until the macaroni is cooked al dente.

5. Stir in the chopped parsley and let the soup simmer for an additional 5 minutes.
