Old Omani cuisine, as rich as with all its centuries of experience, is fast making waves wherever culinary masterminds of this time and chefs themselves are able to relish the real flavor and art. Laden with native and neighborhood spices and ingredients on its table, Oman is discovering a rising niche for itself on the contemporary gastronomic map.

Omani cooking secret is a light touch with spices and fresh fruits and vegetables. The turmeric, cumin, cardamom, and saffron spices are used to prepare aromatic-flavored food from a country’s ancient trading past and multicolored geography. Of all the dishes, the most legendary is perhaps the shuwa—a lamb marinated and braised low in a sand oven buried in the ground. Shuwa has classically been cooked for public use but used to comment on food as social practice and in fact Oman’s comparatively fairly deeply rooted hospitality.

Specialty foods markets and shops even began carrying traditional ingredients, food, and spices that home cooks and professionals today use.

Oman’s geography continues to affect its cuisine. Its massive coastline is where its ginormous seafood intake is generated, and its such foods as masgouf—a herbed and seasoned grill fish—get to become global blockbusters. Natural sweeteners such as dates and honey, which also thrive in Oman, get the cake and the pastry, balancing Oman’s salty cuisine with the sweetness needed.

Food activity in the guise of international food festivals, cooking schools, and cultural exchange have been taking Omani cuisine to a worldwide level. Besides entertaining the crowd with an Omani twist, the activity also reflects symbolism of culture. Omani cooks who are overseas giving cooking lessons are more likely to emphasize traditional food preparation, and hands-on follow-up demonstration of the culture using food.

With altering global diets, Omani cuisine also receives its due share of spotlight not just on taste fronts but culture fronts. Cuisine which was once home food and religious ritual-based is being rediscovered by generation after generation of chefs who are willing to marry reality with creativity. It was cooked in such a manner that the cuisine locally traditional in Oman became stronger but acquired new people without losing its authenticity.

With so outward-bound growth, Omani cuisine will be among the world’s gastronomic giants—on the merit of a flavor, custom, and hospitality-based philosophy that will have so much to share anywhere in the world.
