Ingredients
– 2 lbs. beef roast
– 8 new potatoes
– 4 cloves of garlic
– 2 tablespoons of olive oil
– Salt and pepper to taste
Instructions
1. Preheat the oven to 200°C /375°F.
2. Do not peel the potatoes and do not cut them. Just wash and blot with paper towel.
3. Crush the garlic cloves and mix them with olive oil.
4. Place the beef roast in a baking dish and rub it with the garlic and olive oil mixture.
5. Season the beef roast with salt and pepper to taste.
6. Place the potatoes around the beef roast in the baking dish.
7. Cover the baking dish with foil and roast in the oven for 1 hour.
8. Remove the foil and continue to roast for another 30 minutes, or until the beef roast is cooked to your preference.
9. Once the beef roast is done, remove it from the oven and let it rest for 10 minutes before slicing.
10. Serve the sliced beef roast with roasted potatoes on the side. Enjoy!
