No longer the UAE’s patronizing shorthand for traditional dining, the country now abounds with gastronomic panache—where camel milk cappuccinos take equal billing with Michelin-starred tasting menus, and Bedouin heritage dating back millennia gets channeled into cutting-edge fusion food. Far from merely redefining the country’s cuisine, it is redefining the very manner in which it sets about building itself in the increasingly globalized world.

Urban farming such as desert farming and Badia Farms are supplying fresh vegetables to upscale restaurants, and chefs are going the extra mile to minimize wastage and sustainable sourcing.

Restaurants such as BOCA in DIFC are paving the way in green kitchens, Emirati honey aficionados, seafood from the UAE, and native blooms. It is bathed in a wave of rising demand for well-being and sustainability—the pillars now firmly established in the country’s cuisine.

A Future of Food Backed by Identity and Innovation

UAE food revolution rolls unrelenting. From harees comfort home-cooked to 12-course degustation dinner complexity or camel milk cappuccino subtlety divinity, there is something to indulge in the nation that is all contrasts but a single manner.
